Cook up rice with chicken is an excellent, healthy rice dish that goes well with fish. People cook many delicious versions of this dish with a variety of tasty ingredients. One option is to add lots of vegetables, which are not only healthy but tasty, better yet if they’re fresh from the garden. Cook-up rice isn’t very hard to make, but you’ll want to cook the pigeon peas ahead of time.

To start the recipe, put water and rice into a pot. You can put more or less water depending on how moist you want the rice to be.

 Now, add the onions, garlic, pepper, and smoked chicken wings. Cover and let this cook for a few minutes.

Then, add the celery, carrots, and fresh thyme. Fresh thyme tastes great in this dish, so feel free to add a lot. Then, salt to taste, and cook it for a bit.

Then, add some water, put the lid back, and continue cooking.

After cooking the rice for about 15 minutes, make some fresh coconut milk. To do this, add some water to the freshly grated coconut (you can use the same grated coconut to make coconut milk for the curry and the rice). Mix and squeeze it with your fingers. Then strain the coconut milk into the cook-up, stir, and cover; let it sit a bit, then repeat.

After another five minutes, add some more thyme. Next, add some chadon beni (culantro) and basil leaves.

After this, it is time to add the pigeon peas and stir them in. Then, wait a few minutes, add the bok choy and poi leaves, and cook it a couple more minutes. Serve your rice and chicken hot and enjoy!

  • Sea Salt to taste
